The Workplace (Health, Safety, and Welfare) Regulations 1992 These regulations require employers to provide effective and suitable ventilation in every enclosed workplace, including kitchens. Catering and cooking can produce significant amounts of fumes, vapours, and heat. Mechanical extraction, via a canopy hood installed over cooking appliances, removes these fumes and vapour and discharges them to a safe location.

The objectives of an effective kitchen ventilation system are to:

  • Remove cooking fumes at the source.
  • Remove excess hot air and bring in cool, clean air to create a comfortable working environment.
  • Ensure air movement in the kitchen does not cause discomfort.
  • Provide enough air for complete combustion at fired appliances and prevent carbon monoxide accumulation.
  • Be easy to clean to avoid the buildup of fat residues and blocked air inlets, which can lead to loss of efficiency and increased fire risk.
  • Be quiet and vibration-free.

Canopies
